Baked Lemon Donuts

Preheat your oven to 350°F (175°C) and grease a donut pan.
In a mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
Add lemon zest, fresh lemon juice, melted unsalted butter, egg, buttermilk, and vanilla extract to the dry ingredients. Mix until just combined.
Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
Bake in the preheated oven for 10-12 minutes or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.
Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
For Lemon Glaze:
In a small bowl, whisk together powdered sugar and fresh lemon juice until you have a smooth glaze.
Dip the cooled donuts into the lemon glaze, allowing any excess glaze to drip off.
If desired, garnish with lemon zest for an extra pop of flavor and color.
