Preparation
Preheat the oven to 400 degrees F and butter a muffin pan. If you use paper molds, you need to grease them as well.
Place all the ingredients in a blender, except the chocolate pieces. Mix on high speed until the dough is smooth and combined, about 3 minutes.
Add the chocolate pieces to the dough and mix.
Divide the batter into the muffin tin, taking care not to fill them more than 3/4 full. Add more chocolate on top if you wish.
Bake for 15 minutes or until a toothpick inserted into the center of the muffins comes out clean.
Remove from the oven and let cool for about ten minutes before eating them.
