Homemade Chicken Noodle Soup

  1. Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and sliced celery. Cook, stirring occasionally, until vegetables are softened, about 5-7 minutes.
  2. Add minced garlic to the pot and cook for another minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Once boiling, reduce heat to low and add shredded cooked chicken, uncooked egg noodles, and dried thyme to the pot. Simmer gently until noodles are cooked through, about 10-12 minutes.
