Berlingozzo: the recipe for the typical Tuscan carnival dessert

How to prepare Berlinzzo

Step 1
Collect eggs and egg yolks in a bowl, then add sugar1.

Beat the mixture with an electric whisk until light, puffy and fluffy2.

At this point add the oil3continue working.

Perfume with grated lemon peel4and then with the orange.
Step 5
Sift the flour together with the yeast and add to the mixture5. Then mix with a spatula.

Pour the mixture into a previously greased and floured donut mold with a diameter of 22-24 cm and then smooth the surface with a spatula6.
Step 7
Bake in a preheated oven at 180°C for about 45 minutes, checking the browning (be sure to do a toothpick test to check the doneness). Remove from the oven and allow to cool7.
Step 8
Turn the cake out onto a serving plate, melt the orange marmalade in a saucepan and spread it over the surface of the cake8.
Step 9
Sprinkle the Berlingozzo generously with granulated sugar and colorful sprinkles. Serve in slices9.

The Berlingozzo can be stored for 3-4 days at room temperature under a glass dome or in a special airtight container.
