Almond cake is a rustic, fragrant and delicious sideboard dessert prepared with a simple dough of chopped almonds, eggs, sugar and wholemeal flour.
Without milk, butter and oil, thanks to the oil naturally present in dried fruit, it has a coarse consistency, somewhere between a cake and a very crumbly biscuit, and is perfect for breakfast or as a snack accompanied by a cup of smoked tea .
You can garnish it with a cocoa glaze and also enjoy it as a dessert at the end of the meal. It is natural and nutritious and is also suitable for people who are intolerant to dairy products.
Almond cake can also be made with other types of flour , such as 0 or 00, spelt or oat flour. You can replace a small part of the almonds with the same amount of walnuts or hazelnuts or, if you like, add chocolate chips for an even tastier result. You can add some raisins and flavor the dough with cinnamon, vanilla or grated citrus peel.
