How to prepare almond cake
Step 1
Place the peeled almonds into the jar of a food processor1.

Mix for a few moments until you reach a coarse, not too floury consistency2.

Put the eggs in a bowl and add the sugar3.

Beat the eggs and sugar with an electric whisk4, it will take about 3-4 minutes.

The mixture should be foamy and clear5.

Add the chopped almonds to the beaten eggs6.

Using a spatula, mix carefully from bottom to top so that the dough does not fall apart7.

Also add the wholemeal flour and sifted yeast8.

Mix carefully and pour the mixture into a round baking dish lined with baking paper (approx. 20 cm in diameter)9.
Step 10
Bake the almond cake in a static oven at 180 °C for about 40 minutes. Remove from the oven and allow to cool, then sprinkle with plenty of icing sugar and serve10.
storage
The almond cake can be stored for 2-3 days at room temperature, under a glass dome or in a special airtight container. Freezing is not recommended.
