The pumpkin and plum cake is a rustic savory cake with a moist, soft and dark center, ideal to bring to the table at the beginning of the meal, combined with a platter of cold cuts and cheese, or as an aperitif along with other savory treats .
Preparation is quick and simple: you just have to peel the pumpkin, cut it into cubes and then cook it in the oven until soft, skewering it with the tines of a fork. The diced pumpkin, cooked and reduced to a puree, is then mixed in a bowl with the eggs, seed oil, flour, starch, grated Parmesan, a drop of milk and baking powder, then finished with the diced scamorza.

Once you have placed the dough in a buttered and floured plum cake tin, all you have to do is sprinkle the surface with a mixture of oil seeds and put everything in the oven until golden brown: for a slightly crunchy and stringy result to the bite, that will seduce the whole family.
For impeccable success, we recommend that you choose a pumpkin with firm, dry pulp such as the Mantovana or the Delica : with a sweet taste and a nutty aftertaste, it lends itself to any type of preparation in the kitchen.

If you have a more watery variant available, we recommend that you increase the quantity indicated in the recipe by about 100 g and then drain the pureed pulp perfectly in a fine-mesh sieve lined with gauze .
The plum cake is excellent both hot and at room temperature and can be enriched with a wide variety of ingredients: crumbled sausage , diced cooked ham, bacon , strips of bacon, chopped walnuts … For a tastier result, you can replace it with Parmesan or Pecorino.
