The savory potato donut is the most elegant and modern variation of the classic and equally delicious focaccia from Bari . The dough is based on 0 flour – less refined and therefore richer in fiber, proteins and mineral salts – and is enriched with boiled potatoes , which give the leavened product great softness and a thin, soft texture.
The surface is spread with brine and then decorated with cherry tomatoes, black olives and oregano, for a fragrant , golden and irresistible final result.
