Spicy potato fritters: the recipe for a soft and fragrant sourdough product

Step 1
Cut the potatoes into chunks, put them in a saucepan and cover with cold water1and cook until very soft. Drain them and let them cool.

Mix flour, yeast and water in a bowl, add mashed potatoes and salt and stir with a wooden spoon.2.

Place the dough on a work surface and knead vigorously3until the dough is soft and smooth.

Place the dough in a bowl, cover with a cloth4 and let it rise until it has doubled in volume (approx. 1.5 hours).

Once the rising time has elapsed, form the dough into a sausage shape and fill it into a donut mold that has been well greased with oil.5.

Place the halved cherry tomatoes and black olives on the surface of the donut6.

Mix the oil with water and a pinch of salt and pour the resulting brine over the dough7.

Perfume with oregano8, cover and let rise for another 30 minutes. Bake the donut in a static oven at 200 °C and let it cook for about 30 minutes.

Once the cooking time is up, remove the donut from the oven, let it cool, then remove it from the pan, place it on a serving plate or cutting board and serve hot.9.
Advice
For this recipe you must use a donut mold, smooth or fluted if you want to give it a nicer shape, with a diameter of 26 cm.

In addition to the double rise , the tricks for a perfect preparation are the following: grease the doughnut mould you have chosen well so that you can then easily cut out the focaccia (you can also brush the oil inside with a kitchen brush); pour a brine made from oil, water and salt onto the surface so that this soft bread is optimally browned.
You can serve your savory potato fritter as a starter : simply cut it into slices and combine it with cured meats, cheeses and various pickles; alternatively, you can use it as a bread substitute to accompany a second protein course or put it in the picnic basket and enjoy it during a trip to the mountains or a picnic outside the city.

The savory potato fritter can also be prepared in advance, reheated later and finally served for dinner or an aperitif. After cooking, it can be covered with cling film and stored in the refrigerator for 1-2 days . Reheat briefly in the oven before serving.
