Ingredients:
Oreo Crust:
24 Oreos (about 2-2 Β½ cups crushed)
5 tablespoons unsalted butter, melted
Cheesecake Filling:
32 ounces (4-8oz packages) full-fat cream cheese, room temperature
1 cup (200 grams) granulated sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
Β½ teaspoon kosher salt
Β½ cup heavy whipping cream
4 ounces bittersweet chocolate, finely chopped
4 ounces white chocolate, finely chopped
Chocolate Ganache:
4 ounces bittersweet or semisweet chocolate, chopped
Β½ cup heavy cream
Instructions:
Oreo Crust:
Preheat oven to 350Β°F (177Β°C).
Crush Oreos finely and mix with melted butter.
Press into the bottom and up the sides of a 9-inch springform pan.
Bake for 10 minutes then cool on a wire rack. Reduce oven to 325Β°F (163Β°C).
Cheesecake Filling:
Wrap the outside of the springform pan with two layers of heavy-duty foil to prepare for a water bath.
In a stand mixer with a paddle attachment, mix cream cheese and sugar until smooth.
Add eggs one at a time, followed by vanilla and salt.
