- Preheat the oven to 350°F (175°C). Grease a 9-inch round springform pan with cooking spray.
- In a food processor, pulse rolled oats until finely ground. Add applesauce, honey or maple syrup, and vanilla extract. Pulse until combined and mixture sticks together.
- Press oat mixture evenly into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese, Greek yogurt, and sugar (or sweetener) until smooth and creamy.
- Add eggs, one at a time, beating well after each addition. Stir in flour and lemon zest until well combined.
- Pour cream cheese mixture over the oat crust in the pan. Smooth the top with a spatula.
- Bake for 35-40 minutes or until the center is almost set. Remove from the oven and let it cool completely on a wire rack.
- Once cooled, cover and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with fresh fruit if desired. Cut into 12 slices.
