Ingredients

For the Energy Bites:
  1. 80 gr. (2.8 ounces) dates.
  2. 70 gr. (2.5 ounces) plums.
  3. Cold water (for soaking plums).
  4. 100 gr. (3.5 ounces) peanuts.
  5. 30 gr. (1 ounce) rice cake.
  6. 20 gr. (0.7 ounces) dried coconut.
  7. 1 teaspoon ground ginger.
  8. ½ teaspoon cinnamon.
  9. Juice of half an orange (approximately 50 ml. or 1.7 fl oz).
For the Chocolate Coating:
  1. 170 gr. (6 ounces) sugar-free white chocolate.
  2. 1 tablespoon vegetable oil.

The Preparation Process

Now, let’s go step by step through the process of creating these delightful Super Energy bites.

Step 1: Preparing the Plums and Dates
  • Start by soaking 70 gr. of plums in cold water for 15 minutes.
  • While the plums are soaking, roast 100 gr. of peanuts in a pan until they turn golden brown.
  • Grind the roasted peanuts in a blender until you have a fine consistency.
  • Set aside 2 tablespoons of the ground peanuts for garnish.
  • Add the soaked plums to the blender.
Step 2: Blending the Ingredients
  • Remove the pits from the dates and add them to the blender.
  • Add 30 gr. of rice cake and 20 gr. of dried coconut to the blender as well.
  • Include 1 teaspoon of ground ginger and ½ teaspoon of cinnamon for added flavor.
  • Squeeze the juice of half an orange into the blender (approximately 50 ml. or 1.7 fl oz).
  • Blend all these ingredients until you have a well-mixed, dough-like consistency.
Step 3: Forming the Bites
  • Once the mixture is ready, start shaping it into small, bite-sized balls.
  • Place these balls on a tray or plate.
Step 4: Freezing
  • Put the tray with the formed balls into the freezer for about 15 minutes. This will help them set and become firmer.
