This roll is a great summer treat that can be prepared quickly, with a crispy meringue crust, mascarpone cheese and vanilla cream and refreshing raspberry jelly.
Lovers of pavlova will enjoy it, and the great thing is that this roll is much faster to prepare. Instead of raspberry jelly, you can use fresh fruit of your choice. The roll is best served the same day it is prepared…
Required ingredients:
Biscuits:
-180 g egg whites (approx. 5 larger eggs),
-230 g crystal sugar (as small as possible),
-2 bags of Dr. Oetker vanilla sugar,
-15 g Dr. Oetker thickener,
-1 tablespoon of squeezed lemon juice
Still needed:
-50 g of Dr. Oetker almond leaves
Cream:
-250 g of mascarpone cheese,
-100 ml of sweet cream,
-2 spoons of powdered sugar,
-1 bag of Dr. Oetker vanilla sugar,
-1 spoon of Dr. Oetker vanilla flavoring
Raspberry jelly:
-200 g of raspberries (frozen or fresh,
-100 ml of water,
-3 tablespoons of sugar,
-2 bags of Dr. Oetker vanillin sugar,
-5 g of Dr. Oetker ground gelatin
Making of:
Raspberry jelly:
First prepare the raspberry jelly: Heat the raspberries, sugar, vanilla and water in a suitable saucepan, then mix with a hand mixer and press through a strainer to remove the seeds.
