INSTRUCTIONS
In a bowl, whisk together the flour, rice flour, salt and cold water until you get a semi-liquid batter that resembles pancake batter. Pour this mixture over the chicken and mix to coat each piece well.
Heat sunflower oil in a skillet over medium-high heat.
Brown the chicken pieces for about 3 to 4 minutes on each side, turning them over.
Once the chicken is cooked, drain it on a rack or on absorbent paper.
In a small bowl, combine soy sauce, water, honey, fish sauce, lemon juice or rice vinegar, brown sugar, ketchup, sesame oil, garlic, sweet pepper, hot pepper, and season with salt and pepper to taste.
In a skillet, add the sauce and cook for 3 to 5 minutes, then add the cooked chicken and continue to cook, stirring, until the sauce thickens, about 1 to 2 minutes more.
Serve hot garnished with chopped cilantro or green onions and sesame seeds.
