Reuben Bake Recipe

- Preheat your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with cooking spray.
- In a large bowl, combine the toasted rye bread cubes and Thousand Island dressing. Toss gently to coat the bread evenly.
- Spread half of the coated bread cubes evenly in the bottom of the prepared baking dish.
- Layer half of the corned beef slices over the bread cubes, followed by half of the sauerkraut and half of the Swiss cheese.
- Repeat the layers with the remaining bread cubes, corned beef, sauerkraut, and Swiss cheese.
- In another bowl, whisk together the eggs, skim milk, salt, and black pepper until well combined.
- Pour the egg mixture evenly over the layers in the baking dish, ensuring all ingredients are coated.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the center is set.
- Remove from the oven and let it cool for 5 minutes before serving.
