  1. Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, apple cider vinegar, honey (if using), salt, and pepper. Set aside.
  2. Combine Ingredients: In a large mixing bowl, combine the black beans, black-eyed peas, corn, tomatoes, bell pepper, red onion, jalapeño (if using), and cilantro.
  3. Add Dressing: Pour the dressing over the bean and  vegetable mixture. Gently toss until everything is evenly coated.
  4. Chill and Serve: Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld together.
  5. Serve: Before serving, stir in the diced avocado if using. Serve chilled or at room temperature with tortilla chips, over grilled chicken or fish, or as a topping for  salads.
