Healthy Peanut Butter Cookies

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In a mixing bowl, combine peanut butter, maple syrup, and vanilla extract. If using, add the organic roasted salted peanuts.
  3. Add Almond Flour: Mix in the almond flour until well combined. The dough should be thick and easily scoopable.
  4. Form Cookies: Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet. Flatten each cookie lightly with a fork. Sprinkle salt flakes on top if desired.
  5. Bake: Bake in the preheated oven for 12-14 minutes, or until the edges are golden brown.
  6. Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
