Low-Point Caprese Pasta Salad

Ingredients:

  • For the Salad:
    • 8 oz (about 2 cups) uncooked whole wheat pasta (such as penne or fusilli)
    • 1 pint cherry tomatoes, halved
    • 1 cup fresh mozzarella balls (bocconcini), halved
    • 1/4 cup fresh basil leaves, chopped
    • 2 tablespoons extra virgin olive oil
    • Salt and freshly ground black pepper, to taste
  • For the Dressing:
    • 2 tablespoons balsamic vinegar
    • 1 tablespoon extra virgin olive oil
    • 1 garlic clove, minced
    • 1/2 teaspoon Dijon mustard
    • Salt and freshly ground black pepper, to taste
