Ingredients

10.5 oz (300 g) pumpkin
7 dried apricots, rinsed in hot water
2 eggs
2 tablespoons vegetable oil
1/2 cup (55 g) cornmeal

1/3 cup (30 g) wheat bran
1 tablespoon baking powder
Salt, to taste
2 tablespoons stevia or any other sweetener
1 teaspoon ground cinnamon

Directions

Prepare the Pumpkin: Preheat the oven to 360°F (180°C). Bake the pumpkin for about 15-20 minutes or until soft. Let it cool slightly, then mash it.
