Weight Watchers Cheesy Cauliflower Bites

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Coating:
    • In a large bowl, combine the reduced-fat shredded cheddar cheese, grated Parmesan cheese, whole wheat breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Prepare the Eggs:
    • In a separate bowl, beat the eggs.
  4. Coat the  Cauliflower:
    • Dip each  cauliflower floret into the beaten eggs, then roll in the  cheese and  breadcrumb mixture, ensuring each piece is well coated.
  5. Bake the  Cauliflower:
    • Place the coated cauliflower florets on the prepared baking sheet in a single layer. Bake for 20-25 minutes, or until the cauliflower bites are golden brown and crispy.
  6. Garnish and Serve:
