Weight Watchers Strawberry Poke Cake

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking pan with non-stick cooking spray.
  2. Prepare Cake Mix: In a large bowl, combine the sugar-free strawberry cake mix, 1 cup water, egg whites, and unsweetened applesauce. Mix well until smooth.
  3. Bake the Cake: Pour the cake batter into the prepared baking pan and bake according to the package instructions, usually about 25-30 minutes or until a toothpick inserted into the center comes out clean.
  4. Cool the Cake: Remove the cake from the oven and let it cool in the pan for about 15 minutes.
  5. Prepare Gelatin: In a medium bowl, dissolve the sugar-free strawberry gelatin mix in 1 cup of boiling water. Stir until completely dissolved, then add 1 cup of cold water and mix well.
  6. Poke Holes: Using a fork or a wooden skewer, poke holes all over the top of the cake.
  7. Pour Gelatin: Slowly pour the gelatin mixture over the cake, making sure it gets into all the holes. The cake will absorb the gelatin as it cools.
  8. Chill the Cake: Cover the cake with plastic wrap and refrigerate for at least 2 hours or until the gelatin is set and the cake is completely cool.
  9. Top with Cool Whip: Spread the fat-free Cool Whip evenly over the top of the chilled cake.
  10. Garnish and Serve: If desired, garnish with fresh strawberry slices before serving.
