Ingredients:
For the Cake:
60g plums
2 tablespoons flaxseeds (white flaxseeds preferred)
90ml water
230g carrots (grated on a fine grater)
80g oat flakes
60g almonds (or other nuts)
1 teaspoon baking powder
A pinch of salt
2 teaspoons stevia (or other sugar substitute)
1 teaspoon cinnamon
100ml milk (or water or orange juice)
For the Cream:
600g ricotta
100g yogurt (to mix with ricotta)
Instructions:
Prepare the Ingredients:
Pour boiling water over 60g of plums and let them soak for 10 minutes.
Mix 2 tablespoons of flaxseeds with 90ml water and let it stand to thicken.
Grate 230g of carrots on a fine grater.
Finely chop the soaked plums.
Measure out 80g of oat flakes and 60g of almonds.
