Directions:
- Prepare the sweet potatoes: Preheat your oven to 350°F (175°C). Peel the sweet potatoes and cut them into cubes. Boil the sweet potatoes in a large pot of water for 15-20 minutes, or until they are fork-tender. Drain and mash the potatoes until smooth.
- Make the casserole filling: In a large bowl, mix the mashed sweet potatoes with softened butter, brown sugar, vanilla extract, cinnamon, nutmeg, salt, beaten eggs, milk, and lemon juice. Stir until the mixture is well-combined and creamy.
- Transfer to baking dish: Lightly grease a 9x13-inch baking dish and spread the sweet potato mixture evenly in the dish.
- Prepare the topping: In a small bowl, combine the melted butter, brown sugar, pecans (if using), and marshmallows. Sprinkle this topping evenly over the sweet potato mixture.
- Bake: Place the casserole in the preheated oven and bake for 30-40 minutes, or until the topping is golden brown and the casserole is heated through.
- Serve: Let the casserole cool for a few minutes before serving. Garnish with additional chopped pecans or marshmallows if desired.
