Ingredients:
1 lb ground beef or turkey
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies, drained
1 cup corn kernels (fresh, frozen, or canned)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup crushed tortilla chips
1/2 cup sour cream (optional for garnish)
Fresh cilantro or green onions (optional for garnish)
1/2 cup sliced olives (optional)
1/2 teaspoon garlic powder (optional)
Salt and pepper, to taste
Directions:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish or line it with parchment paper for easy cleanup.
Cook the ground meat: In a large skillet, brown the ground beef or turkey over medium heat. Break it apart with a spoon as it cooks, and once fully browned, drain any excess fat.
Add seasonings: Stir in the taco seasoning and a little water (as directed on the seasoning packet). Let the mixture simmer for a few minutes, allowing the flavors to meld together.
Prepare the casserole: In a large bowl, combine the cooked meat mixture with the black beans, diced tomatoes, corn, and any additional seasonings you like (such as garlic powder or extra salt and pepper). Mix thoroughly.
Assemble the casserole: Spread a layer of crushed tortilla chips on the bottom of the prepared casserole dish. Then, pour the meat and vegetable mixture over the chips. Sprinkle a generous layer of shredded cheddar and mozzarella cheese on top.
Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
Serve and garnish: Once baked, remove the casserole from the oven. Garnish with a dollop of sour cream, fresh cilantro, green onions, and sliced olives if desired. Serve hot and enjoy!
Serving and Storage Tips:
Serving: Taco Casserole is perfect served as a main dish with a side of crispy tortilla chips, a simple green salad, or even a bowl of guacamole. It can also be topped with additional sour cream, salsa, or hot sauce for extra flavor.
Storage: Leftover Taco Casserole can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through. For longer storage, freeze the casserole for up to 3 months. When ready to eat, reheat in the oven or microwave, and it will taste just as delicious as the first time.
