Ingredients:
4 large russet potatoes
2-3 tablespoons white vinegar
6 cups water (for boiling)
1 teaspoon salt (for boiling)
Oil for frying (vegetable or peanut oil works best)

Directions:
Prepare the Potatoes:
Wash, peel (optional), and cut the potatoes into even sticks, about ¼ inch thick. Soak them in cold water for 30 minutes to remove excess starch.
Boil with Vinegar:
In a large pot, bring water to a boil. Add vinegar and salt. Carefully drop the potato sticks into the boiling water and cook for 5-7 minutes until slightly tender but not falling apart. Drain and pat the fries dry with a clean towel.
Pre-Fry for Perfection:
Heat oil in a deep fryer or large skillet to 325°F (163°C). Fry the potatoes in small batches for 3-4 minutes. They should not brown at this stage but will become pliable. Remove and drain on paper towels.
Final Fry for Crispiness:
Increase the oil temperature to 375°F (190°C). Fry the pre-cooked potatoes again, this time for 3-5 minutes, until golden and crispy. Drain excess oil and transfer fries to a wire rack or paper towel-lined tray.
