Ingredients:
2 slices of hearty bread (sourdough or whole wheat works best)
1 large Hatch chile, roasted and peeled
2 slices of sharp cheddar cheese
2 slices of mozzarella cheese (for extra meltiness)
2 tablespoons butter, softened
1 tablespoon olive oil (optional, for grilling)
Salt and pepper, to taste
Directions:
Prepare the Hatch Chile: If you haven’t already, roast your Hatch chile over an open flame or on a grill. After roasting, place the chile in a bowl and cover it with a kitchen towel to steam for a few minutes. Once it cools down, peel off the skin, remove the seeds, and slice it into strips.
Assemble the Sandwich: Spread a thin layer of butter on one side of each bread slice. On the unbuttered side, place one slice of cheddar cheese, followed by a layer of Hatch chile strips. Then add the mozzarella cheese and top it with the second slice of cheddar. Close the sandwich with the buttered sides facing out.
Grill the Sandwich: Heat a skillet or griddle over medium heat. Once hot, place the sandwich on the skillet. Grill for about 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the cheese has melted.
Serve: Once done, remove the sandwich from the skillet, cut it in half, and serve immediately. Enjoy the smoky, spicy goodness of the Hatch chiles mixed with the gooey cheese.
