Pecan log rolls are a delicious and decadent dessert that brings together the rich flavor of caramel, the crunch of pecans, and the creamy sweetness of marshmallows.

Ingredients

To make pecan log rolls, you will need the following ingredients:

_2 cups of chopped pecans

_1 cup of heavy cream

_1 cup of granulated sugar

_1/2 cup of light corn syrup

_1/4 teaspoon of salt

_1/2 teaspoon of vanilla extract

_1 1/2 cups of mini marshmallows

_1 tablespoon of butter

Instructions

Start by preparing the pecans. Place the chopped pecans in a shallow dish and set them aside.

Next, prepare a clean surface by lining a baking sheet with parchment paper, which will be used to roll the candy later.

In a medium-sized saucepan, combine the heavy cream, granulated sugar, corn syrup, and salt. Stir.

Bring the mixture to a boil and let it cook for 5 to 7 minutes, stirring occasionally. The mixture should thicken slightly and become a caramel-like consistency.

Add in the mini marshmallows and butter, stirring until both are melted and fully incorporated into the caramel.

Now it’s time to assemble the pecan log rolls. Pour the caramel mixture over the chopped pecans, making sure to evenly coat them.

Allow the mixture to cool for a few minutes until it’s cool enough to handle but still soft and sticky.

Take small portions of the caramel-pecan mixture and roll them into logs, about 2-3 inches long.

Place each log on the prepared parchment paper and continue until all of the mixture has been rolled into logs.

Once all the log rolls are shaped, let them sit at room temperature for 1 to 2 hours, allowing them to firm up slightly.

If you prefer a firmer texture, refrigerate the logs for an additional 30 minutes to 1 hour.
