No-Bake Protein Cookies

Ingredients You’ll Need

2 cups rolled oats – Old-fashioned or porridge oats work best. Jumbo oats give a chunkier texture.

3 tbsp vanilla protein powder – Choose one without added sugar or sweeteners.

½ cup peanut butter – Natural peanut butter with no added sugar is best. Use almond or cashew butter if preferred.

½ cup almond milk – Unsweetened is ideal. Cashew milk is a great substitute.

¼ cup maple syrup – Use your favorite kind for flavor.

2 tbsp cocoa powder – Raw cacao powder is healthiest, but any works.

¼ tsp cinnamon – Optional, adds warmth.

⅛ tsp nutmeg – Freshly ground gives the best flavor, but pre-ground works too.

⅛ tsp sea salt – Enhances all the flavors.

½ tsp vanilla extract – Use a pure, high-quality version.

How to Make No-Bake Protein Cookies

Step 1 – Mix the dry
In a large bowl, stir together the rolled oats and protein powder.

Step 2 – Heat the wet ingredients
In a small saucepan over low-medium heat, combine peanut butter, almond milk, maple syrup, cocoa powder, cinnamon, nutmeg, and salt. Stir continuously until smooth and the cocoa powder is dissolved.

Step 3 – Add vanilla
Remove the pan from heat and stir in the vanilla extract.

Step 4 – Combine
Pour the warm chocolate mixture over the dry ingredients. Stir thoroughly until the oats are evenly coated.

Step 5 – Chill the mixture
Place the bowl in the fridge for 10 minutes so the dough can thicken.

Step 6 – Shape the cookies
Remove the mixture from the fridge. Using damp hands, form 12 even-sized cookies and flatten slightly. Place them on a parchment-lined baking sheet.

Step 7 – Serve or store
Enjoy right away, or chill the cookies for a firmer texture. Store leftovers in the fridge.

How Long Will No-Bake Cookies Last?
These cookies can be stored in the fridge for up to 7 days in an airtight container. You can also freeze them for up to 3 months—just thaw at room temperature before eating.
